3-ingredient pepita choc bites

Ingredients: (makes 15 little bites)

140g pepitas (pumpkin seeds)

180g dark chocolate (70–85%), chopped or chips

Pinch sea salt

Instructions:

1. Pan-toast the pepitas

  1. Heat a large non-stick frypan on medium.

  2. Add pepitas.

  3. Toast for 5–7 minutes, stirring often, until they smell nutty and begin to pop.

  4. Add pinch of sea salt

  5. Transfer to a tray to cool.

  6. Blend 40g of the toasted pepitas in a high speed blender until just crumbly. Put to the side.

2. Melt the chocolate

  1. Place dark chocolate in a heatproof bowl.

  2. Microwave in 20–30 second bursts or melt over a double boiler.

  3. Stir until silky. Add in the pepita crumb.

3. Build your bites

  1. Spoon 1/2 tbs of the melted chocolate pepita crumb mix into each mini round silicone mould (or use a tray lined with baking paper and break into 15 pieces when set).

  2. Top with remaining toasted pepitas, pressing them lightly into the chocolate.

4. Chill

Refrigerate for 30 minutes until firm.
Pop out of the moulds and store in an airtight container in the fridge for up to a week, and 3 months in the freezer.
