Green Goddess Salmon Salad

Ingredients: 1 serve
140g salmon fillet
2½ cups green goddess salad mix
1 tbsp roasted pepitas (10g)
1 tbsp Green Goddess dressing (store-bought, all-natural ingredients)
Pinch sea salt and cracked black pepper

Method
Season the salmon with salt and pepper and cook in a non-stick frying pan over medium heat for 3–4 minutes each side, until golden and just cooked through.
Add the green goddess salad mix to a large bowl.
Flake the warm salmon over the salad.
Sprinkle over the roasted pepitas.
Drizzle with the Green Goddess dressing and gently toss before serving.
