Chicken Miso & Edamame Power Bowl

Ingredients: 1 serve
90g cooked chicken breast, sliced
⅓ cup (60g) cooked brown rice
⅓ cup (50g) shelled edamame
2 cups slaw mix (no dressing) (carrot, cabbage)
1 spring onion, sliced
Sprinkle of sesame seeds (optional)

Miso Dressing
1 tbsp white miso paste
1 tsp freshly grated ginger
½ tsp sesame oil
Juice of ½ lemon
Splash of warm water to loosen

Instructions:
Arrange the rice, cabbage, carrot, cucumber, edamame and chicken in a bowl. Whisk together the dressing ingredients until smooth, then drizzle over the top. Finish with spring onion and a sprinkle of sesame seeds if using.
