Creamy Prawn & Avocado Crunch Salad

This beautifully retro salad is packed with lean protein to support muscle and metabolism in midlife, while avocado and olive oil provide healthy fats to help keep hormones and blood sugar steadier. The crunchy cucumber and fresh lime make it feel light and refreshing, but it’s still genuinely filling.

Ingredients: 1 Serve

180g cooked prawns
½ small avocado, diced
½ Lebanese cucumber, sliced
1 cup shredded lettuce or baby spinach
¼ cup cherry tomatoes, halved
2 tbsp plain Greek yoghurt
1 tsp Tabasco sauce
Juice of ½ lime
1 tsp olive oil
Salt + cracked pepper
Fresh coriander

Instructions

  1. In a bowl, combine the yoghurt, Tabasco, lime juice, olive oil, salt, and pepper to make a creamy spicy dressing.

  2. Add lettuce, cucumber, tomatoes, avocado, and prawns.

  3. Toss gently through the dressing.

  4. Finish with coriander and extra Tabasco if you like heat.
