Kefir Lemon Chia Pudding With Blueberrie

Why this is peri-perfect… This gentle chia pudding uses kefir as the base for a powerful probiotic boost - calming inflammation, easing bloat, and helping your digestion settle. The lemon zest supports digestive enzymes and gives it that clean, refreshing lift, while the chia seeds provide fibre to keep things moving comfortably.

Ingredients: 1 serve
1⁄2 cup plain kefir
1⁄2 cup cottage cheese (or Greek yoghurt)
30g vanilla protein powder
1 tbsp chia seeds
Zest of 1⁄2 lemon
Squeeze of fresh lemon juice
1⁄2 cup blueberries (fresh or frozen)
1–2 tsp honey (to drizzle on top)

Instructions:

1.In a bowl or jar, whisk together the kefir, cottage cheese/yoghurt, protein powder, chia seeds, lemon zest, and lemon juice until smooth and well combined.
2.Let it sit for 5 minutes, then stir again to prevent clumping.
3.Cover and refrigerate for at least 1 hour (or overnight for the thickest pudding).
4.Top with blueberries and drizzle with honey before serving.
5.Add an extra sprinkle of lemon zest if you want a little more brightness
