Ingredients: 4 serves
600g chicken mince
1 small fennel bulb, grated
1 tsp fennel seeds
1 egg
1 tbsp olive oil
4 big handfuls rocket
Juice of 1 lemon
Salt + pepper

Instructions:

Combine chicken mince, grated fennel, fennel seeds, egg, salt + pepper.

Roll into 16 meatballs (4 per serve).

Bake at 180°C for 15–20 mins.

Toss rocket with lemon juice + olive oil.

Serve meatballs over rocket.
