Ingredients: 4 serves
600g chicken breast, sliced
1 tbsp olive oil
1 cup fresh pineapple pieces
1 tsp turmeric
1 tsp grated ginger
1 cup light coconut milk
1 tbsp fish sauce or soy
1 red capsicum, sliced
3 cups baby spinach
2 cups cooked brown rice
Instructions
1.Heat oil, cook chicken with turmeric + ginger.
2.Add capsicum, pineapple, coconut milk, and soy/fish sauce.
3.Simmer 5 mins, fold in spinach.
4.Serve over rice
