Ingredients: 4 serves
600g chicken mince
1 small fennel bulb (grated)
1 tsp fennel seeds
1 egg
1 tbs olive oil
4 big handfuls of rocket
Juice of 1 lemon
Salt and pepper
Instructions:
Combine the chicken mince, grated fennel, fennel seeds, egg, salt and pepper.
Roll into 16 - 18 meatballs (about 4 a serve)
Bake at 180* for 20 mins.
Toss rocket through the lemon juice and olive oil
Serve meatballs over rocket and add extra black pepper.
