Chunky Chicken, Broccoli & Haloumi Salad with Lemon Dressing

Ingredients:

400g cooked roast chicken breast, chopped or shredded

200g haloumi, cut into cubes

300g broccoli florets (steamed or lightly blanched)

2 cups baby spinach

1 small cucumber, chopped

1 tbsp olive oil (to cook haloumi)

Zesty Lemon Dressing:

2 tbsp extra virgin olive oil – 240 cal

Juice of 1 lemon

1 tsp Dijon mustard

1 garlic clove, finely grated

Salt & pepper, to taste

Optional: zest of ½ lemon for extra punch

 

Instructions:

  1. Cook the haloumi:
    Heat 1 tbsp olive oil in a non-stick pan over medium heat. Sear haloumi cubes for 1–2 minutes each side until golden. Set aside.

  2. Prep broccoli:
    Steam or lightly blanch broccoli florets until tender but still with bite. Drain and cool slightly.

  3. Assemble salad:
    In a large bowl, combine roast chicken, cooked broccoli, spinach/rocket, chopped cucumber, and golden haloumi cubes.

  4. Mix the dressing:
    Whisk together lemon juice, olive oil, mustard, garlic, salt, and pepper. Taste and adjust seasoning as needed.

  5. Toss and serve:
    Drizzle the dressing over the salad and gently toss to coat. Serve in generous portions—this one’s meant to fill you up.
