Creamy cardamom chicken

Ingredients: 4 serves

700g chicken thighs, trimmed (boneless, skinless)

1 tbsp olive oil

1 large onion, finely sliced

1 red capsicum, chopped

8 cardamom pods, lightly crushed

1 tbsp grated fresh ginger

1 tsp ground cumin

1 tsp garam masala

1/4 tsp turmeric

½ cup chicken stock

⅓ cup crème fraîche

Fresh coriander, to serve

Salt & pepper

 

Instructions:

1.     Heat the oil in a large pan over medium heat.

2.     Add the onion and capsicum and cook until softened and lightly golden.

3.     Add the ginger, cumin, garam masala, turmeric, and cardamom pods. Stir for 1–2 minutes until fragrant.

4.     Add the chicken thighs, cut into bite-sized chunks. Season with salt and pepper.

5.     Pour in the chicken stock, reduce heat, cover, and let it simmer for 12–15 minutes.

6.     Turn off the heat and stir through the crème fraîche, letting the residual heat melt it into a silky sauce.

7.     Scatter with fresh coriander and serve.
