Cauliflower Mac & Cheese

Feta and mozzarella contribute creamy flavour and extra protein, while olive oil and spices enhance heart-healthy fats and flavour without excess calories. It’s creamy, satisfying, and nourishing - comfort food that works with your body, not against it (win win!).

Serves: 4 big portions

Ingredients:

250g red lentil pasta (dry)

1 medium cauliflower (600g), chopped into small bite-sized florets

100g feta cheese, crumbled

80g light mozzarella, grated

2 tbsp Greek yogurt

2 tsp olive oil

2 tsp garlic powder

1 tsp smoked paprika (optional)

Salt & pepper to taste (big pinch)

Optional: chopped parsley or chives to finish

 

Instructions:

1.     Cook the Pasta:
Cook lentil pasta in a large pot of salted water until just al dente. Drain and set aside.

2.     Cook the Cauliflower:
Steam or boil the cauliflower florets until tender but not mushy — about 8 minutes. Drain well.

3.     Sauté for Flavour (Optional but delish):
In a large pan, heat 2 tsp olive oil. Add the cooked cauliflower and sprinkle over garlic powder, smoked paprika, and a pinch of salt. Sauté for 2–3 minutes to add depth and slight caramelisation.

4.     Combine Everything:
In a big mixing bowl (or the pasta pot), stir together the cooked pasta, sautéed cauliflower, crumbled feta, and Greek yogurt if using. Mix gently to combine. Season with extra salt and pepper to taste.

5.     Bake:
Transfer the mix into a baking dish. Sprinkle mozzarella over the top. Bake at 200°C (400°F) for 15 minutes, or until the top is golden and melty.

6.     Serve:
Dish up those big, protein-packed serves. Add fresh herbs if you fancy.

Per serve: 400 calories, 30g protein.
