Chipotle Grilled Tofu With Black Bean Salad.

🧄 Ingredients

For the Chipotle Tofu:

·       500g extra-firm tofu, pressed

·       2 tsp olive oil

·       1 tbsp chipotle in adobo sauce (or 1 tsp chipotle paste)

·       1 tbsp tomato paste

·       1 tbsp lime juice

·       1 tsp smoked paprika

·       1 tsp ground cumin

·       1 garlic clove, minced

·       Salt to taste

For the Black Bean Salad (makes 4 serves):

·       1 cup cherry tomatoes, halved

·       1 Lebanese cucumber, diced

·       ¼ red onion, finely diced

·       ½ cup canned black beans, rinsed and drained

·       2 tbsp chopped fresh parsley or mint

·       2 tbsp lemon juice or apple cider vinegar

·       Salt & cracked pepper to taste

To Serve:

·       2 tbsp plain Greek yoghurt per bowl (low-fat or full-fat, depending on preference)

·       Extra lime wedges or coriander (optional)

 

🔥 Instructions

1.     Press and slice tofu:
Cut into 8 thick slabs after pressing.

2.     Make marinade:
In a bowl, mix olive oil, chipotle, tomato paste, lime juice, paprika, cumin, garlic, and salt. Coat tofu and let marinate 20–60 mins.

3.     Grill tofu:
Cook on a grill pan or skillet over medium heat for 3–4 mins per side until nicely charred and crispy at the edges.

4.     Make the black bean salad:
Toss together cherry tomatoes, cucumber, red onion, black beans, herbs, lemon juice or vinegar, salt and pepper. Let sit for a few minutes to absorb flavours.

5.     Assemble the bowls:

o   Scoop ¼ of the salad into each bowl

o   Add 2 tofu slabs

o   Dollop 2 tbsp Greek yoghurt on the side

o   Garnish with lime or coriander if desired
