Ingredients:

600g firm white fish fillets (ling is BEST here), cut into chunks

1 tbsp olive oil

1 small onion, finely sliced

2 tbsp Indian korma curry paste (check label for clean ingredients)

200g light coconut milk

200g tinned chopped tomatoes

1 cup chopped green beans (frozen fine)

1 big handful fresh spinach

Juice of 1 lime

Salt and pepper to taste

Fresh mint to serve

Instructions:

Heat olive oil in a large pan. Sauté onion until soft.

Stir in curry paste and cook for 1–2 mins until fragrant.

Add tomatoes and coconut milk, stir well, and bring to a simmer.

Add fish chunks and green beans and gently simmer for 6–8 mins or until just cooked through.

  1. Stir through spinach and lime juice. Adjust seasoning.
