Mocha Protein Balls

Makes 8 balls | 120 calories each | ~8g protein per ball
Ingredients:
1/2 cup (40g) vanilla protein powder
1/2 cup (45g) almond flour
1 tbsp nut butter (of choice)
3 tbsp Greek yoghurt (high-protein style like YoPro or Chobani Fit)
1/2 tsp vanilla extract
Pinch of salt
2 tbsp cacao nibs
1 espresso shot of coffee or 1 tsp instant coffee diluted in 4tbs boiling water
Method:
Blend dry: Combine protein powder, almond flour, and salt in blender.
Add wet: Blend in nut butter, yoghurt, and vanilla extract until a dough forms.
Adjust texture: Add the coffee liquid and keep blending till a fudgey ball forms.
Fold in cacao nibs: Or roll them in at the end.
Shape: Roll into 8 bite-sized balls.
Chill: Pop in the fridge for 15–20 minutes to firm up.
