Ingredients (4 serves):
1 tbsp olive oil
1 small fennel bulb, thinly sliced
1 zucchini, chopped
1 small carrot, chopped
1 tsp freshly grated ginger
1/2 tsp ground turmeric
4 cups chicken bone broth
400g cooked chicken breast, shredded (roast chicken without the skin works well!)
Juice of 1/2 lemon
1 tsp apple cider vinegar
pepper to taste
Fresh parsley, chopped
Instructions:
1. Sauté the base:
Heat olive oil in a large pot. Sauté fennel and carrot for 3–4 mins until softened. Add ginger and turmeric, cook for another 30 seconds.
2. Simmer:
Add zucchini and broth. Simmer gently for 10 minutes until veg is soft.
3. Add protein:
Stir in shredded chicken, lemon juice, and apple cider vinegar (if using). Simmer 2–3 mins more. Season to taste.
4. Serve:
Ladle into bowls and top with fresh parsley. Sip slowly, belly first.
