Ingredients: 8 slices
3 eggs
100g coconut oil
100g dark chocolate (70–85%)
80g dates
400g tin black beans, drained and rinsed (approx. 240g beans)
1 tablespoon ground flaxseed
Instructions:
Preheat oven to 180°C (350°F). Grease and line a small cake tin or loaf tin.
Gently melt coconut oil and chocolate together.
In a food processor, blend dates and black beans until smooth.
Add eggs, melted chocolate mixture, and flaxseed. Blend again until well combined.
Pour into tin, bake for around 25–30 minutes or until set in the middle.
Cool before slicing.
