Spicy Tofu & Edamame Power Bowl.

Why this is peri-perfect… Protein-packed, nutrient-dense, and full of flavour. Tofu and edamame provide a complete plant-based protein boost to support muscle, metabolism, and hormone balance. Broccoli, spinach, and mushrooms add fibre, vitamins, and antioxidants to support gut health and reduce inflammation. The bold, spicy sauce with ginger, garlic, and sriracha not only elevates taste but also brings metabolism-supporting and anti-inflammatory benefits. It’s vibrant, satisfying, and a smart way to enjoy a quick, nourishing, plant-powered meal.

Ingredients:

400g firm tofu, dried and cubed

2 cups edamame

2 tbsp tamari or soy sauce

3 cloves garlic,  minced

2 tsp fresh ginger, grated

2 cups broccoli chopped

2 big handfuls baby spinach (chopped roughly)

1 cup mushrooms, sliced

Sauce (bold + spicy):

2 tsp sriracha (or to taste)

2 tsp rice vinegar

2 tsp sesame oil

Toppings (optional, minimal cals):

  • Lime wedges

  • Spring onion

  • Chili flakes or fresh chili

  • Coriander

Instructions:

  1. Crisp the tofu:
    Pat tofu dry and cube. Pan-fry in a non-stick pan until golden and crisp. Set aside.

  2. Sauté veg:
    In a large wok, add a splash of water or ½ tsp oil. Sauté garlic, ginger, and mushrooms for 2–3 mins. Add broccoli with a splash of water, cover and steam 3 mins. Add spinach and stir until wilted.

  3. Add protein + sauce:
    Add tofu and edamame to the pan. Stir in tamari, sriracha, vinegar, and sesame oil. Toss well to coat and heat through.

  4. Finish and serve:
    Serve hot with a squeeze of lime, extra chili if you’re brave, and herbs on top.
