Minty Summery Edamame Salad

Fresh, light, and packed with powerful plant protein, this salad is made for the warmer days when you still want something substantial—but not heavy. Edamame and tofu deliver a double dose of complete protein (hello, 30g per serve) to keep blood sugar balanced and energy steady, while avocado and pepitas bring the healthy fats your hormones thrive on. Spinach and cucumber hydrate and refresh, and the mint? It’s not just a flavour boost—it supports digestion and gives this salad its cool, calming vibe. With fibre, phytoestrogens, minerals, and a zingy dressing to tie it all together, this bowl is midlife nourishment that feels like a breath of fresh air.

Ingredients: 4 serves

2½ cups shelled edamame (cooked)

4 cups baby spinach leaves

1 large avocado, diced

1½ cups chopped cucumber

1 cup chopped fresh mint

400g firm tofu

6 tbsp toasted pepitas (pumpkin seeds) toast them on a dry hot pan

Zingy Mint Dressing:

2 tbsp lemon juice

1 tsp olive oil

1 tsp apple cider vinegar

Salt + pepper, to taste

Extra chopped mint (because we love it)

Instructions:

1.     Chop tofu insto small cubes and dry fry with a little spray of olive oil until golden brown. Put to the side.

Toss spinach, cucumber, avocado, mint, and spring onion in a large bowl.

2.     Add edamame and tofu and season.

3.     Drizzle over dressing and toss gently.

4.     Divide into 4 bowls and sprinkle with toasted pepitas and extra mint.
