Ingredients:
1thick slice (50g) sourdough bread
1 large egg
1/3 cup (80g) low fat cottage cheese
1/2 cup (15g) baby spinach
1/2 tsp Dijon mustard
Salt & pepper – to taste
Chili flakes or fresh herbs – optional garnish
Instructions:
Toast your sourdough.
Scramble the eggs + cottage cheese.
In a nonstick pan, lightly spray with oil (or use a tiny dash of olive oil if you like and count the cals).
Crack in the egg and scramble with the cottage cheese, spinach, and mustard until soft and creamy.Season + serve.
Pile the warm, protein-rich scramble onto your toast. Top with herbs, chili, or extra cracked pepper if you like.
