Protein Tofu & Egg Bowl

Ingredients (1 serve)

100g store-bought marinated tofu

1 large egg

1 tsp olive oil

½ cup kimchi

½ cup kale, chopped

Optional: sprinkle of sesame seeds or spring onion on top

 

Instructions

1.     Heat a non-stick pan with the olive oil.

2.     Add marinated tofu cubes and fry for 3–4 minutes until golden on each side.

3.     In the same pan, fry or poach your egg. Take the egg out of the pan, toss in the kale and a splash of water and steam until it wilts.

4.     Serve everything in a bowl with the greens and kimchi on the side.

5.     Sprinkle sesame seeds or chopped chives or spring onion for extra flair.

Per serve: 300 cal, 30g protein, 8g carbs, 15g fat, 3g fibre
